Weekend Cookbook: Easy Vegetable Soup

Can you tell I am trying to eat healthier? I don't think the Weekend Cookbook has ever featured a healthy recipe but here is one to try.

I was wandering through our local Coles recently and saw one of those Soup packs and thought "I'd really like to try to make a nice winter soup". I have been trying to shed a few baby kilos (there aren't that many but I want to fit back into some of my pants) and have been using an app on my phone to record everything that I eat. It is a calorie counter but instead of becoming obsessive about it, it has helped me to see what I am eating and slow down in some areas. I have actually discovered being hungry again (not starving but actually hungry at meal times) and it is really nice. It has also helped me to see that I can have a piece of cake or a bit of chocolate as long as I make good choices at other times.

Anyway according to My Fitness Pal this recipe is 123 calories per serve. Sadly that does not include crusty bread with loads of butter which would go perfectly with this soup.

Easy Vegetable & Lentil Soup


Coles Soup Mix Pack (containing potato, swede, parsnip, celery, onion and carrots)


OR use vegetables of your choice
1 tbls olive oil
1 litre vegetable Stock
1 clove of garlic, crushed
1 bay leaf
1 can of diced tomatoes
1 can of lentils






1. Finely chop onions and fry in the bottom of a large stock pot with garlic and olive oil until soft.
2. Dice and slice vegetables of your choice and place into the pot with the stock, lentils, bay leaf and can of tomatoes.
3. Cook on a medium heat for 30 minutes then season with salt and pepper to taste.
4. Remove bay leaf and serve topped with fresh parsley (and crusty fresh bread if you have some).
